Vegetable Lentil Curry
Ingredients
1 tbsp olive oil
3 cups sliced button mushrooms
4 cups vegetable or chicken broth
1 cup dried red lentils
4 cups chopped bok choy
5 chopped green onions
Curried Sour Cream
1 pinch ground cumin
Directions
Heat olive oil in a large saucepan over medium heat. Add in the garlic, bok choy, carrot and garlic. Cook until vegetables are softened approximately 5 minutes.
Add in broth, lentils, rice, ginger root, cumin, turmeric, coriander and pepper. Bring to a boil then reduce heat to low and cover. Simmer for about 20 minutes.
Uncover and stir in corn and green onions. Re-cover and simmer for another 5 minutes or until rice and lentils are tender.
Mix together all the ingredients for the curried sour cream into a small bowl.
Dish out the vegetable lentil curry into bowls and top with curried sour cream and serve.
