In a very large pot melt butter over medium heat. Add in the onion, carrot, broccoli and garlic. Cook till vegetables have softened.
Add the chicken stock and pepper into the pot and bring to a boil. Put the chicken in and simmer covered for 45 minutes.
Once the soup has simmered for 45 minutes shred the chicken with a fork till it is in bite sized pieces. Then add in the corn, tomato and lentils. Re-cover and let simmer for another 15 minutes until lentils are soft.
