Preheat oven to 350 degrees Fahrenheit. In a single layer spread the zucchini, peppers and asparagus on a pan. Drizzle 3 tablespoons of olive onto the vegetables and sprinkle with pepper and salt. Roast vegetables in the oven for 15 - 20 minutes.
Boil 1 cup of water in a medium pot. Remove from heat and add in couscous and stir. Cover the pot and lit sit for 5 minutes.
In a heat proof bowl add in couscous stir in 1 tablespoon of olive oil, lemon juice and cumin. Mix in roast vegetables, green onion and cilantro. Break goat cheese into small pieces and place on top.
