Ingredients

2 tbsp olive oil

4 cups sliced chicken breasts or thighs

1 sliced green, red and yellow pepper

1 white onion chopped

1 pinch ground pepper

2 tbsp chili powder

1 tbsp ground cumin

4 cloves garlic chopped

5 cups milk

4 cups penne pasta

1 cup shredded jalapeno jack cheese

1 cup shredded cheddar cheese

1 cup corn kernels

1/2 cup chopped fresh cilantro

Directions

In a large pot heat oil over medium heat. Add in chicken thoroughly till you can no longer see any pink. Remove from pot and set aside.

Add garlic, onion and bell pepper to the large pot you cooked the chicken in. Cook till the onions are translucent.

Return the chicken to the pot with the pepper mixture. Add in spices; cumin, chili powder and pepper. Stir till spices are combined evenly.

Add milk, corn and uncooked pasta into the pot and cook for about 20 - 25 minutes stirring regularly. Cook till pasta is al dente and milk has become a thick sauce.

Remove pasta from heat and stir in cheese and cilantro stir till cheese has melted and coated the pasta evenly.
