Chicken Parmesan
Ingredients
500 g chicken thighs or breasts
1 cup panko bread crumbs
1 cups fresh grated parmesan
2 tbsp olive oil
24 oz. jar tomato sauce
1 1/2 cups shredded mozzarella
Directions
Preheat oven to 350 degrees Fahrenheit. Put cooling rack on top of a baking sheet and set aside.
In a large bowl mix together, rosemary, thyme, 1/3 cup parmesan and panko.
In a separate medium bowl beat egg till well mixed.
Sprinkle salt and pepper on both sides of the chicken. Sprinkle flour onto both sides of the chicken then dip in the egg till evenly coated. Transfer the chicken to the panko mixture and coat both sides evenly. Place chicken on the wire rack then drizzle with olive oil.
Bake chicken on the wire rack in the middle of the oven for 20 – 25 minutes till chicken is cooked through. Increase oven temperature to 500 degrees Fahrenheit.
Once chicken is done baking pour tomato sauce into a casserole dish and place chicken on top of sauce. Sprinkle the top with the mozzarella and remaining parmesan and return to the oven and bake till the top is golden brown about 10 minutes.
