Tomato Garlic Pasta Salad
Ingredients
1/2 tbsp olive oil
1 lb pasta
15 oz. ricotta cheese
1/2 cup fresh grated parmesan
1 pint cherry tomatoes, halved
1/4 cup fresh basil, chopped
Directions
Cut a 1/2 inch off the garlic and put into a microwaveable safe bowl and microwave covered for about 2 minutes on high till garlic is soft. Once cooked allow to cool and then squeeze garlic out onto a cutting board and mince then place into a medium bowl.
Bring a large pot of water to boil. Add in pasta and cook till al dente as per package directions. Reserve 1/2 cup of the starchy pasta water and set aside.
Add the ricotta, starchy water, salt, pepper and basil to the medium bowl with the garlic and combine till a sauce is formed.
Return pasta to the warm pot with the element turned off. Add in spinach, ricotta sauce, parmesan and tomatoes. Mix till combined and serve warm.
