Ingredients

1/4 cup canola oil

200 ml softened butter

2/3 cup crunchy or smooth peanut butter

1/3 cup powdered sugar

1 cup brown sugar

1 egg

1 tbsp vanilla

2 1/2 cups flour

1 1/4 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/3 cup jam (any flavour)

Directions

Preheat oven to 350 degrees Fahrenheit.

Cream butter, peanut butter, oil, brown sugar and powdered sugar. Add egg and vanilla.

In a separate bowl sift flour, baking powder, salt and baking soda. Combine into peanut butter mixture until evenly mixed.

Roll dough into 1" balls and place on parchment paper lined baking sheet. Make a thumb-sized imprint into each dough ball and spoon jam into each imprint.

Bake for 10 - 12 minutes until lightly browned on the bottom.
