In a medium frying pan fry up the bacon till cooked through and desired crispness. Set aside on an plate with paper towel on it to soak up the grease.
Drain most of the grease from the frying pan into a container. Fry eggs in the frying pan with leftover bacon grease flipping once. Fry eggs till white is just cooked and yolk is still runny. Set aside eggs.
Spread chipotle sauce on to two halves of bread. Sprinkle the two halves with a 1/4 of the cheese. Top each with an egg and green onions. Place 2 1/2 slices of bacon on to each half. Sprinkle on the remaining cheese to both halves evenly and top with the second piece of bread.
Add some more bacon grease to the pan if necessary and fry the grilled cheese sandwiches till the bread is browned on both sides and cheese is melted.
