Broccoli and Cheese Soup

Ingredients

5 cups chopped broccoli florets and stalks

1/2 medium chopped yellow onion

2 cloves chopped garlic

1 pinch pepper

1 cup water

2 cups milk

2/3 cup corn starch

1/4 cup butter

In a large pot melt butter over medium heat. Add in broccoli, garlic and onion and cover stirring occasionally till onion is translucent.

Add in chicken broth and re-cover simmering till broccoli is tender. Add in milk, pepper and chili powder and stir till simmering.

Mix water and cornstarch in a small bowl till combined completely. Pour cornstarch mix into the pot stirring constantly till thickened.

Remove soup from heat and stir in cheddar cheese and serve.
