Ingredients

8 oz. green chile enchilada sauce

14 oz. can of black refried beans

3 cups spanish rice (recipe here) or plain white rice

1 cup sour cream

1 cup corn cernels

3 cups shredded cheddar cheese

extra sour cream for topping

fresh cilantro to garnish

2 sliced avocadoes

Directions

Preheat oven to 375 degrees Fahrenheit.

Spread refried beans on the bottom of a 9" x 13" casserole dish. Layer rice on top. Add corn on top of the rice.

Pour green chile enchilada sauce over top the corn. Put even dollops of sour cream on top of the echilada sauce. Sprinkle cheddar cheese on top.

Bake casserole in the oven for 20 - 30 minutes till heated through and cheese is melted.

Top with cilantro, avocado and sour cream.
