Butter Chicken
Ingredients
1 tsp chili powder
1/2 tsp ground cumin
796 ml can of diced tomatoes, drained
1 1/2 cups chicken broth
1 tbsp chopped fresh cilantro
4 cups cooked basmati rice
Directions
Cut chicken into 1" cubes. Melt butter in a large deep skillet over medium heat. Add in cubed chicken and cook till it is fully cooked remove from pan and set aside.
Add in onion and garlic and cook till onions are tender. Add ginger, coriander, turmeric, chili powder, cinnamon and cumin. Add tomatoes, broth, brown sugar and pepper. Reduce heat to low and cover simmering for about 10 minutes. Stir occasionally.
Remove lid and mash tomatoes till desired consistency. Add in chicken and sour cream simmer further uncovered for 5 minutes. Serve over rice and top with cilantro.
