Butter Tarts
Ingredients

1 cup packed brown sugar
1/2 tsp vanilla
1 tsp vinegar
1/2 cup chopped walnuts (if desired)
1/2 cup raisins (if desired)
Directions
To make the pastry sift the flour and salt into a medium bowl. Cut in butter till it resembles pea-sized pieces. Add the tablespoons of cold water one at a time till the dough holds together. Form the dough into a ball, wrap and then refrigerate for 15 minutes.
Flour a clean surfaces and roll out the dough till it is very thin. Cut out circles of the dough in the size of a large cup/mug. You should have about 12 circles. Place the pastry circles into a greased muffin tin.
Preheat oven to 350 degrees Fahrenheit.
If you're adding the walnuts put them on a pan and roast them for 5-10 minutes. Once they are brown increase the oven to 450 degrees Fahrenheit.
If you're adding raisins place them into the bottoms of the tart shells.
In a medium bowl whisk together the melted butter, vinegar, sugar, egg, vanilla and hot water. Make sure the butter and water aren't too hot as that will cook the egg.
Fill the tarts evenly with the butter/sugar mixture about 2/3 of the way full.
Bake in the oven for 10-12 minutes until golden brown. Allow to cool a bit then serve.
