Chocolate Lava Cakes
Directions
Prepare 4 ramekins by greasing them and putting a circle of parchment paper on the very top.
In a medium microwavable bowl microwave butter and chocolate chips for 45 seconds. Stir then put in 15 seconds at a time till just melted and stir till smooth.
Whisk sugar, salt, flour into the chocolate chip mixture until blended. Beat in eggs, egg yolks and vanilla.
Spoon chocolate mixture into ramekins. Cover and refrigerate for at least 1 hour until ready to bake.
Preheat oven to 450 degrees Fahrenheit. Back for 13 - 18 minutes or until edges are firm but centers are still slightly soft. Let cool for 5 minutes. To serve carefully run a knife around the cake edges and turn ramekin over and allow cake to empty out on to the plate gently. Remove parchment and dust with icing sugar and serve with fresh fruit or on it's own.
