Preheat oven and bake tater tots as per package directions.
Cook chorizo sausage in a medium pan until fully cooked. Drain fat from chorizo and set aside.
Poach eggs to desired doneness and set aside.
To prepare Hollandaise Sauce heat up a double broiler pot. Add in egg yolk and water stir very quickly till thickened usually takes a couple of minutes. Remove from heat and mix in lime juice then chorizo fat and salt.
In a bowl layer tater tots then add in the chorizo. Top with poached eggs and drizzle Hollandaise Sauce over the top of everything. Sprinkle green onions on top and add a pinch of pepper to taste.
