Ingredients

14 oz. can of coconut milk

16 oz. canned chickpeas drained and rinsed

2 tbsp curry powder

2 tbsp white onion finely chopped

2 cloves chopped garlic

1 pinch cayenne pepper

1 pinch pepper

1 pinch salt

1 tsp lime juice

2 cups chopped broccoli florets

1 large grated carrot

1/4 cup peanut butter

Directions

Shake can of coconut milk and empty into a medium bowl. Whisk in peanut butter, pepper, cayenne, curry and salt until smooth.

Add in chickpeas, carrot, onion, garlic and broccoli. Stir in lime juice and serve.
