Enchilada Pie
Ingredients
296 ml can enchilada sauce
127 ml can green chiles
1 tsp chili powder
1 tsp ground cumin
1 avocado cubed
2 tbsp chopped cilantro
Directions
Preheat oven to 350 degrees Fahrenheit.
Lightly brown ground beef in a large pan. Add onion and garlic until onions are tender. Add beans, tomato, cumin, chili powder, cilantro and chilies. Set aside.
In a medium/small bowl mix together sour cream and flour.
In a 6" circular casserole dish place first tortilla in the bottom of the dish. Layer a quarter of the meat sauce, enchilada sauce, sour cream mix, avocado, corn and 1/4 cup of cheese. Repeat layers three more times leaving out the cheese layer on the last layer.
Cover casserole dish with tin foil and bake for 30 minutes. Remove from oven and take off tin foil. Top with remaining cheese and bake for another 15 -20 minutes until lightly browned.
