Ingredients

1 liters water

3 chicken or vegetable stock bouillon cubes

4 large chopped carrot

1 large white onion

4 cups cubed small white potatoes

3 diced tomatoes

3 sticks chopped celery

1 tbsp minced garlic

1 tbsp olive oil

3/4 cup corn cernels

Seasonings

1 tsp pepper

2 bay leaves

1 tsp dried basil

1 tsp dried rosemary

1 tsp dried parsley

1 tsp dried oregano

Directions

Boiled potatoes in water with bouillon cubes till potatoes were slightly tender approx. 5-10 minutes.

In a separate pan heat olive oil and add in garlic, celery, onion, carrot and saute till fork tender.

Add sauted vegetables to the pot of boiling water along with the tomatoes, corn and seasonings. Let simmer for 20-30 minutes.
