Thinly slice carrot on an angle then julienne into small match stick pieces. Peel the jicama and in half. Thinly slice and then julienne into small match stick pieces.
In a small bowl whisk together all of the dressing ingredients.
In a very large bowl add in all of the vegetables and toss with the dressing allow to marinate for at least half an hour. Re-mix up salad and serve.
