In a large bowl mix together sun dried tomatoes, olives, feta, oil, basil, garlic and spinach.
Line a 9 x 9" casserole dish with tin foil. Make a slice into the chicken till about an inch away from the end to make a pocket.
Spoon spinach mixture into the chicken breasts. Cover chicken breast in mustard. You can use a toothpick soaked in water to hold the chicken together better as it is baking.
Bake in the oven to 30-35 minutes till chicken has been cooked through and lightly browned on top.
