White Chocolate Peppermint Cookies
Ingredients
1/2 cup cocoa powder
1/4 cup softened butter
3/4 cup white sugar
2 lbs white chocolate chips
Directions
Preheat oven to 325 degrees Fahrenheit. Sift together flour, baking powder, baking soda, cocoa and salt in a medium bowl.
Beat butter and sugar in a medium bowl till combined completely. Add in egg and mix till combined once combined add in the yolk. Add in the peppermint extract.
Make a hole in the dry ingredients and add in the wet ingredients and combine till fully incorporated. Wrap dough in saran and put in the fridge for at least an hour.
Flour surface and roll out dough till it is about 3-4 mm thick. Put in the freezer for 15 minutes till dough is firm. Cut out circles about 5 cm diameter. Repeat process until the dough is used up.
Put cookies on pans lined with parchment at least a centimeter apart. Bake cookies till they are dry to the touch for about 10-15 minutes. Once baked lay on a cooling rack.
Melt chocolate in microwave and dip cooled cookies into the chocolate return to the parchment. Sprinkle with crushed candy cane while chocolate is still melted and let cool.
