Ingredients

4 large baking potatoes

2 cups shredded cheddar cheese

1 cup sour cream

2 chopped green onions

1/2 cup bacon bits

1 pinch pepper

Directions

Preheat oven to 350 degrees Fahrenheit. Wash potatoes and prick with a fork all over. Wrap potatoes in tin foil and bake for one hour. Flip potatoes and bake for another half an hour.

Remove potatoes from oven and loosely unwrap tin foil a bit and allow to cool for about half an hour.

Cut off the top half centimeter of the potatoes. Scoop out the inside of the potatoes (use a tsp or melon baller) into a large bowl and mash.

Add the sour cream, green onions, pepper, bacon and cheddar cheese reserving about a 1/4 cup of the cheddar into the mashed potatoes and combine fully.

Spoon the mashed potato mixture into the hollowed out potato skins. Top the potatoes with the rest of the cheese.

Preheat oven to 350 degrees Fahrenheit again and bake potatoes in the oven for 15-20 minutes till cheese has melted and potatoes are lightly browned.
